ʻUlu Flour Fried Chicken Batter

Use this gluten free batter for crispy fried chicken, fish, veggies, or ʻulu!
1/2 cup breadfruit flour
1/4 cup cornstarch
1 tsp ground black pepper
1/4 tsp ground paprika (optional)
1 tsp baking powder
1 tsp kosher salt plus more to taste
3/4 cup cold water
1.5 quarts oil or as much as necessary to cover chicken
Place the oil in a medium pot and heat to 350 degrees F.
Mix dry ingredients together in a bowl and then slowly whisk in the water to create a slightly thinner pancake like batter. Will be slightly clumpy.
Pat the chicken dry first and then coat in the batter and fry until golden brown and cooked.
Rest on a paper towel to drip excess oil off and then serve warm.
