Poi is traditionally served as a simple side dish alongside fish or poke, and also makes a great, all-natural topping for acai bowls. It can even be used as a highly versatile ingredient for baked goods, salad dressings, gravies and frostings!
How to prepare fresh frozen poi: Remove from the freezer and allow to sit at room temperature until soft enough to break apart into pieces by hand. For the stovetop method, remove from bag and place the poi pieces into a pot and add about 1/4 cup of water for each pound of poi;* stir constantly on low heat until the poi is smooth.
For microwave method, remove from bag and place the poi pieces into a microwave safe bowl and add 1/4 cup water for each pound of poi;* microwave on high for 4 minutes or until smooth. Cool to room temperature to serve. This poi is frozen fresh and has a subtly sweet flavor. If desired, it can be fermented at room temperature to make a sour poi.
*If in doubt, use less water, you can always add more water later.
