A local twist on traditional mashed potatoes. Add shredded cheese for a more decadent side dish!
1-1/2 lb. fresh or frozen ‘ulu (can also combine part ‘ulu and part sweet or regular potato)
1 Tbsp butter
¾ cup milk
¾ cup shredded cheese (optional)
Salt and pepper, to taste
Chop ‘ulu (and sweet or regular potato, if using) into chunks and place in saucepan with 1” water. Bring to a boil. Reduce heat to medium and cook, covered, until fork can be inserted; add more water as needed to keep from burning. If using frozen ‘ulu, cooking time will be reduced. Remove from heat and place in mixing bowl. Add butter, milk, salt and pepper, and cheese (if using). Blend with hand mixer or potato masher until mostly smooth – leaving some chunks of skin adds a fun texture.
Tip: be careful not to over-mix, or else mash will start to become sticky like poi.
