These purple pancakes made with Okinawan sweet potatoes are packed with antioxidants! A healthy way to start off your day.

Ingredients

1 cup recipe-ready ʻuala, defrosted and mashed

2 large eggs

1/2 cup milk

2 tablespoons light brown sugar

1 tsp. vanilla

1 tablespoon maple syrup

½ cup all purpose flour
-
¼ cup ʻulu flour
-
1 tsp. baking powder
-
¼ tsp. salt
-
2 tablespoons melted butter
Directions
Place mashed uala in a large bowl. Add eggs, milk, brown sugar, vanilla and maple syrup and whisk together
Sprinkle flour, baking powder, salt on top the uala mixture and stire until smooth. Add melted butter and mix until combined
Set a large nonstick skillet over medium heat and add a small pat of butter. Once melthed, drop 1/3 cup portions of the batter onto the reheated skillet. Cook until bubbles form on the top of the pancake, 2 to 4 minutes, then flip and cook for an additional 2 to 3 minutes
Repeat process until all of the batter has been used
