Decadent Homemade Ripe ʻUlu Brownies

Ingredients

  • 142 g baker’s ripe ʻulu

  • ½ cup unsalted butter

  • ¾ cup brown sugar

  • 2 eggs

  • ¾ cup flour

  • ¼ cup cocoa powder

  • ¼ tsp salt

  • ½ tsp vanilla

  • ½ tsp baking powder

  • 130 g chocolate chips

Directions

  1. In a saucepan, melt butter and transfer to a large mixing bowl.

  2. Add brown sugar and vanilla to melted butter in mixing bowl and whisk.

  3. Slowly whisk in the eggs.

  4. In a mixing bowl, place ulu with ¼ cup hot water and let sit for 2 minutes, then mash with a fork.

  5. In a mixing bowl, place ulu with ¼ cup hot water and let sit for 2 minutes, then mash with a fork, set aside to cool.

  6. Add the ʻulu to the butter, sugar, egg mixture and whisk until smooth.

  7. In a separate mixing bowl, add flour, cocoa powder, salt, and baking powder and whisk together.

  8. Add the dry ingredients in 1/3 increments to the wet and mix with a plastic spatula, do not over mix.

  9. Add in the chocolate chips.

  10. Place batter into a parchment paper lined 9 x 13“ pan.

  11. Bake at 350°F for 25 minutes.
