ʻIʻini's Instapot Beef Stew with Kalo and Palaʻai

This simple and delicious vegetable beef stew incorporates hearty Hawaiian staple crops: taro (kalo) and squash (palaʻai), which you and your family will love!
ʻIʻini Kahakalau
Ingredients

1 Onion

2 Garlic cloves
-
1lbs Stew meat
-
12 oz. (1 bag) ʻUlu Co-op recipe-ready kalo

12 oz. (1 bag) ʻUlu Co-op recipe-ready palaʻai

3 Stalks of celery
-
3 Carrots
-
3 Tomatoes
-
1 tsp Salt
-
1 tsp Pepper
-
1 Cup Poi (preferably sour)
Directions
Dice onion and garlic and sauté in an Instant Pot.
Once the onions are glassy add the stew meat and brown the outside.
While your meat is browning cut the celery, carrots, and tomatoes and put it in the Instant Pot.
Open both the ʻUlu Coop recipe-ready kalo and palaʻi and put it in the Instant Pot.
Add your salt and pepper.
Then pour enough water just to cover the ingredients.
Set the Instant Pot to Slow Cook for 5 hours.
Once the 5 hours are finished open the cover and add 1 cup of poi into the Instant Pot.
Stir in the poi and watch the consistency of the broth go from thin to thick.
Serve hot.
