A classically inspired dessert baked with white pineapple & breadfruit flour. Tartly sweet with a delicious cookie like crisp this is perfect for any gathering!
Ingredients
-
1 tbsp ʻulu flour
-
16 oz chopped white pineapple
-
2 tbsp honey*
-
¼ cup All-purpose flour + ¼ cup ʻulu flour
-
½ cup cold unsalted butter, cubed*
-
½ cup brown sugar
-
1 tsp cinnamon
-
1 cup oats
Directions
Preheat the oven to 400 ̊F.
In a medium bowl, combine pineapple, honey, and 1 tbsp ʻulu flour.
Place the pineapple mixture in an ungreased 8”x8” baking pan or desired baking dish.
Using the same bowl, combine the All-purpose and ʻulu flour mixture, butter, brown sugar, cinnamon, and oats by hand or with a spoon until combined. The texture should be similar to cookie dough and can be easily pressed and held together.
Crumble the topping evenly over the pineapple mixture and lightly press down.
Bake for 25-27 minutes or until bubbling around the edges and golden brown on top. Serve warm as-is or with vanilla ice cream.
