Learn how to cook ʻulu (breadfruit), a nutritious well-balanced traditional polynesian staple. When prepared well, it is arguably better than potatoes!

How to Cook Breadfruit

  1. For better results, place your ʻulu in the fridge overnight to remove the sap.

  2. Place your whole ʻulu in a boiling water for 40 minutes, constantly rotate the ʻulu.

  3. To know when your ʻulu ready, a knife can be inserted easily into the center.

  4. Once you know it's ready and cooled. Cut the portion needed and remove the skin by scraping with a knife or spoon. Any extra ʻulu can be covered and put in the freezer for later use.

  5. Pro Tip: Texture of ʻulu may change after freezing but will be restored by the heat when cooking which reconnects starch molecules.

  • Aloha. Do you have a recipe for using Ulu to make plant-based kalua “pork”? I found a recipe using Jackfruit, but I have an Ulu tree and would like to learn to make a healthier version. Mahalo in advance.
