This simple cheesy ulu (breadfruit) bites recipe uses Hawaii Ulu Cooperative Recipe-Ready Ulu for a quick and hassle-free side!

Ingredients

4 Cups Recipe-Ready ʻUlu, steamed and peeled

1 Cup Breadcrumbs

3 Tbsp Butter
-
1 Cup Milk
-
1 ½ Cups Shredded cheese (cheddar or mexican blend), divided

1 Egg
-
2 Tbsp AP ʻUlu Flour Mix
-
1 tsp Garlic powder
-
1 tsp Paprika
-
¼ tsp Salt
-
½ tsp Pepper
Directions
Preheat oven to 425℉. Lightly grease a muffin tin.
Dice steamed ʻulu into 1-2 cm cubes.
In a large saucepan, melt butter over medium heat. Stir in flour, garlic powder, paprika, salt, and pepper until smooth. Slowly whisk in the milk.
Bring to a boil, stirring constantly. Continue to stir until mixture thickens, about 2 minutes. Stir in 1 cup of the cheese until melted.
Remove from heat, stir in egg and bread crumbs.
Add in ʻulu and mix to combine all ingredients.
Fill compartments of a muffin tin with ʻulu and cheese mixture
Once all muffin compartments are filled, top with another light layer of cheese.
Bake in the oven until golden brown, about 10-12 minutes.
Allow the pan to cool before serving.
*To customize, try adding in bacon or sausage bits, diced jalapeños, sun dried tomatoes, or caramelized onions.
**When having little hands help, pre-chop and measure ingredients to avoid downtime for them. Keiki as young as 2 can help pour, stir, mix, and sprinkle cheese on top! Make sure little helpers wear oven mitts when working with a hot pan to avoid burns.
