A moist and tender banana bread made with apple bananas and ʻulu poi, lightly spiced with cinnamon and enriched with Greek yogurt for a soft, flavorful loaf with a subtle island sweetness.
Ingredients
Dry Ingredients
2 cups all-purpose flour
1.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
Wet Ingredients
2 cups apple banana, mashed
1/2 cup avocado oil
1/2 cup plain Greek yogurt (can use sour cream)
1/2 cups Poi from @Hawaiiulucoop
1 cup water
1 large egg, room temp
1 tsp vanilla extract
1 cup brown sugar
Directions
Mix dry ingredients in large mixing bowl.
Mix wet ingredients in seperate large mixing bowl.
Add half of the dry ingredients into the wet and slowly combine, then add remaining dry ingredients. Fold gently.
Add batter to parchment lined loaf pan.
Bake for 40 minutes at 350°F or until toothpick comes out clean.
