Ingredients

7 g mixed egg yolk and white

80 g sugar

37 g condensed milk

4 g salt
-
145 g warm milk
-
55 g smooth poi

75 g melted unsalted butter

97 g glutinous rice flour

52 g tapioca starch
Directions
1. Heat oven to 390°F. Lightly grease your pan.
2. Whisk warm milk and poi until completely smooth.
3. Whisk in egg, sugar, condensed milk, and salt.
4. Add melted butter and mix well.
5. Whisk in glutinous rice flour and tapioca starch until the batter is smooth and pourable.
6. Pour into pan and bake at 390°F for 10 minutes.
7. Reduce heat to 350°F and bake 20 minutes more, or until set and lightly golden.
8. Cool slightly before slicing. Best when just warm or fully cooled and chewy.
Recipe Note
• Use smooth poi for the best texture. If your poi is very thick, whisk thoroughly with the warm milk first.
• This is a test-batch formula. For stronger poi flavor, increase poi slightly and reduce the milk by the same amount.
• A little vanilla or coconut extract works well here.
