This is my mom's classic beer bread recipe that I grew up eating - taken up a notch using locally sourced 'ulu flour and local brewed lager. It has a crunchy and crusty exterior and soft and tender inside with delicate onion notes and a cheesy finish that perfectly compliments the earthiness of the 'ulu and the maltiness from the beer. Served warm with butter, its a quick and easy side for any meal.

Ingredients

2 cups All-purpose flour

1 cup ‘Ulu flour

3 Tbsp. Raw sugar or honey

4 ½ tsp. Baking powder

1 ½ tsp. Salt

1 12oz. Can or bottle local beer (I used Ola Brew Ma’a Island Lager)

1 bunch Chives, chopped
-
1 bulb Shallot, thinly sliced

½ cup Mild shredded cheese (I used Mozzarella) plus more for topping

1 Tbsp. Butter, melted
Directions
Mix dry ingredients in a large bowl.
- Add beer, chives, shallots, and cheese then mix well.
- Place dough in greased loaf pan.
- Pour melted butter on dough and sprinkle extra shredded cheese on top.
- Bake at 350 degrees for 50-60 min.
- Slice and serve warm with butter.
