We are excited to announce the results of our Spring 2021 ʻUlu Recipe Contest!
Congratulations to our grand prize winner Erin Foley from Oʻahu, who receives a $100 gift card to Restaurant XO. Mahalo to our featured judges Farmer Andrew Trump and Chef Harrison Ines for reviewing all of the submissions and recreating the winning recipes for judging.

ʻUlu (Breadfruit) Angel Food Cake
by Erin Foley, Oʻahu
Erin did a fabulous job making this gluten-free, 100% ʻulu breadfruit flour angel food cake. It is a perfect light dessert — slightly less sweet than typical angel food cakes, which lets the flavor of the ʻulu come through. The recipe uses egg whites as a binder, adding protein for a tasty and healthy dessert.

Bacon Wrapped ʻUlu Poppers

Daniel creatively uses mature (not sweet) or ripe (sweet) ʻulu in an incredible pupu you can enjoy at a casual barbeque or formal dinner. Steamed breadfruit chunks are wrapped in bacon, which adds a savory crispiness and seals in the moisture of the ʻulu. The pops are garnished with sour cream, sriracha, and green onion — literally a pop of flavor.

Mofongo de Pana (ʻUlu)

Chad's recipe is a Caribbean dish typically made from green plantain and chicharrón, but here it uses breadfruit and pork belly. It is served with caldo (broth) made from beef bones, onion, garlic, salt, oregano, cilantro, and recao (culantro). The pork belly is simmered in herbs then fried; the ʻulu is steamed then fried. Both are mashed in a mortar and pestle to form the mofongo, plated with caldo and garnished with cilantro and chicharrón.
