Soft, gooey, and packed with cinnamon goodness, these gluten-free cinnamon rolls use a special blend of ‘ulu flour, xanthan gum, and starch to achieve a moist and tender crumb.

Ingredients

288.4 g ‘Ulu AP flour

25g Granulated sugar

236.67g Water

28.78g Unsalted butter

4.06g Bakers yeast

1/3 Large egg
-
2g salt
-
1 tsp xanthan gum

10g Light brown sugar

2 tsp Cinnamon

4g Vanilla extract

73.75g Powder sugar
Directions
In a large mixing bowl, whisk together dry ingredients.
In a heat safe bowl, combine the water and butter. Microwave in intervals until warm but not completely melted.
Combine water, butter, egg, and dry ingredients and mix with a wooden spoon.
Add in extra flour if too sticky and knead with hands.
Shape into a ball, cover, and let rest uncovered for 10 minutes on the counter.
Place the dough ball on floured surface, roll out and shape into a rectangle with a rolling pin.
Spread the remaining butter in a thin layer, then sprinkle on the brown sugar and cinnamon.
Roll the dough into a log, using hands to support the ends and compact it.
Use a serrated knife or floss to cut the log Into rolls and place into a greased pan.
Place into a proofer or warm space and let rise for one hour, preheat the overn to 350F
Bake for 25-30 minutes or until golden brown.
Mix the icing ingredients together and drizzle on the rolls once they are cooled.
