Farm to table slightly spiced cassava fries with aioli, a dish youʻll surely remember.

1 medium sized cassava root
Chopped rosemary to taste
1 Tbsp. minced turmeric
salt to taste
Take a medium sized cassava root, peel, then de-core center fiber strand.
Rough cut into preferred fry size
Toss in preferred oil
Add a dusting of turmeric for color, salt, and chopped rosemary
Spread across baking tray and bake for 25 minutes on 425 F
Check halfway through and turn fries.
Pair with a spicy dipping sauce such as aioli and serve.
There are a few diff kinds of cassava. This recipe is for the "yellow" kine which is faster to cook. Other varieties will need to be par-boiled before prepping for recipe.
