Try this crispy and savory recipe for ʻUlu Korean Pajeon (pancakes) from Anissa Lucero.

ʻUlu Korean Pajeon

Ingredients

  • 1 lb of ʻulu (fully cooked and peeled)

  • ¼ cup coconut milk

  • ½ cup peeled and cleaned shrimp, or ½ cup mushroom (marinated in shoyu 30 min)

  • ½ cup green pepper

  • 1 cup chopped green onion

  • 1 Tbsp garlic chili sauce

  • 2 beaten eggs

  • 1-3 Tbsp GF All-Purpose or Wheat Flour

  • Oil for frying

  • 2 Tbsp shoyu

  • 1 Tbsp rice wine vinegar

  • 1 Tbsp green onion

  • 1 tsp sugar

Directions

  1. Cut ʻulu into ½ inch cubes.

  2. Add coconut milk to ʻulu and mash with a potato masher until desired consistency is achieved.

  3. Sauté green pepper and shrimp.

  4. Add sautéed green pepper, shrimp, and freshly chopped green onion to ʻulu mix.

  5. Mix ingredients, then add eggs and flour.

  6. Make 3-inch patties and fry with canola or coconut oil until golden brown.

  7. For sauce, mix all ingredients together in a small sauce bowl.

  • Make a donut with a jackfruit & banana filling. No sugar glaze though just use maple syrup or honey. Or make a biscuit in a cake pan rectangle or square or circle with a jackfruit & banana pudding on the inside. Topping macadamia whip cream & honey or maple syrup drizzle or chocolate chips can be in the dough as well. The dough made with ulu flour that’ll be great.
