Harrison Ines XO Restaurant

Harrison Ines, born and raised on O'ahu, began working in the restaurant industry at the age of 16, starting out as a dishwasher at Le Bistro.

After learning to cook by way of Hula Grill, Koko Head Cafe and Cafe Kaila, Ines landed at Senia where he worked his way up to lead line cook under Michelin Starred chefs Chris Kajioka and Anthony Rush.

When Senia colleague Kenneth Lee left to open Restaurant XO, Ines followed one year later to come on as his Chef De Cuisine.

"As a chef and a settler in Hawaiʻi I am trying to understand my kuleana, or my responsibility to the native people and history of this land as well as the land itself. Because of that ingredients such as 'ulu are something I cannot ignore."
