What can ‘ulu do?
Use ‘ulu as a substitute for potatoes in virtually any recipe. Dice and use in salads, stews, and stir-frys. Mash and serve like mashed potatoes or fry up as patties. Cut into wedges or strips and make delicious ‘ulu fries, or slice thin to make ‘ulu chips. Think of ‘ulu like a locally grown potato substitute that’s healthier for you and the planet!

At the Hawai‘i ‘Ulu Cooperative, we believe that ‘ulu is an important part of Hawai‘i’s food future. From our farmers’ ‘ulu trees to your table, we are committed to making this delicious, sustainable, nutritious, and versatile starch convenient and readily available to the generations of today and tomorrow. By growing and sharing a canoe crop that has fed the islands for over a thousand years, we perpetuate Hawai‘i’s rich cultural heritage while also helping to sequester carbon and regenerate our ‘āina. Every purchase directly supports the 100 local farm families that make up our co-op, keeps dollars in our local economy, and contributes to a healthier, more resilient Hawai‘i nei.
