This recipe was featured at Waikiki Elementary School's 'Harvest of the Month' program. Similar to hash browns, latkes are typically made to celebrate the festival of Hanukkah, paired with sour cream and applesauce. Enjoy this version to enjoy latkes all year round!

8 oz Kalo
2 tbsp Onion
1 Egg
1/4 cup All Purpose Flour
1/4 tsp Baking Powder
Salt & Pepper To Taste
Cooking Oil
Grate or mash pre-cooked kalo and onion together.
Squeeze out the excess water from the grated kalo with a dish towel, cheese cloth or strainer.
Place kalo and onion in a large mixing bowl and mix in all other ingredients.
Heat a skillet and add oil. While the skillet warms up, use your hands to make golf-ball size balls of the kalo mixture.
Press the kalo flat onto the hot skillet.
Cook until golden brown, flipping each cake once its crispy.
Serve warm and enjoy!
