Creamy Spiced Coconut Squash

Ingredients

  • 2 cups steamed squash, large dice

  • 1 Tbsp canola oil

  • 1 clove garlic, minced

  • ½ cup coconut cream

  • ½ tsp Gochugaru (Korean Chili pepper flakes)

  • ¼ each lime

  • 1 scallion, thinly sliced

  • 1 tsp sesame seeds

  • Salt and pepper to taste

Directions

  1. In a small saucepan, warm the oil and garlic together for about 2 minutes over medium heat, until fragrant.

  2. Add the squash, cream, chili flake and season with salt and pepper.

  3. Cook covered for 5 minutes on medium heat.

  4. Stir in a squeeze of lime and scallions.

  5. Check seasoning and adjust as necessary. Garnish with sesame seeds before serving.
