Ingredients

62.5g ‘ulu flour

62.5 mochi flour

10g yeast

29.5g water

50g eggs
-
153g soy milk

12.5g monk fruit sugar

1.5g salt

29g avocado oil
Directions
Combine all the exact measurements of the dry ingredients in a large bowl and mix
Combine all the exact measurements of the wet ingredients in a medium bowl and mix
Add the wet ingredients into the dry ingredients and mix
Let the batter proof for 20 minutes to 2 hours whichever is desired
Pour out 3 pancakes onto a nonstick pan over low heat
Flip after 2-3 minutes or until golden brown
Repeat on other side of pancake
Place the pancakes on a plate and repeat with 3 more pancakes or the remainder of the batter

Use a nonstick pan to avoid adding oil
Using avocado oil instead of coconut oil lowers the fat content
Using monk fruit instead of granulated sugar lowers the sugar content
proofing time can change depending on preference
