A classic poke recipe made with Kalo, limu, and ʻinamona & seseame oil by Chef Kealoha Domingo.
Kealoha Domingo
Ingredients

1½ lbs. recipe-ready kalo
-
½ a medium round onion, finely sliced

1 cup pure sesame seed oil

2 Tbsp. alaea salt (add to taste)

2 Tbsp. ‘inamona (reserve the rest for garnish)

Limu, chopped (to taste)

¼ Cup green onion, finely sliced (reserve some for garnish)
Directions
Warm kalo in microwave for approximately 5-7 minutes, then cool to room temp. Cut into 1/2” cubes. Add sesame seed oil kalo to coat. Season with salt and ‘ina- mona, then add sliced onions and limu and mix well. Garnish with a dusting of ‘inamona and top with limu and green onion before serving.
