ʻĀina friendly vegetarian taro burgers made with chick peas, ‘ulu flour and Hawai‘i ‘Ulu Co-op's recipe ready kalo.

Ingredients

12 oz. recipe-ready kalo

1 can chick peas
-
½ cup ‘ulu flour

1 medium onion chopped
-
8 oz. mushrooms chopped

2 Tablespoon mustard

1 egg
-
1 Tablespoon cumin
-
1 Tablespoon chili flakes
-
1Tablespoon onion powder
-
1 Tablespoon garlic powder

1 stalk green onion chopped

Herbs such as parsley, rosemary and thyme

1 Tablespoon salt

2 tsp. black pepper
Directions
Grate half thawed recipe-ready kalo with a grater and set aside.
Drain canned chick peas and blend in a blender or mash into smaller pieces and set aside.
Finely chop the onion and caramelize it in a frying pan and set aside.
Finely chop the mushrooms and sauté in frying pan and set aside.
Finely chop green onion and herbs and set aside.
Combine the chick peas, kalo, ‘ulu flour, caramelized onion, sauteed mushroom, mustard, egg, herbs, spices, pepper and salt in a large mixing bowl and mix together well.
Form burger sized patties. For this recipe you will end up with about 7 to 8 patties depending on the size of each patty.
Fry the patties in a pan until both sides are golden brown with an ample amount of oil.
Serve on a bun with ketchup, mustard, cheese, tomato and lettuce or with any of your favorite burger toppings. Enjoy with ‘ulu pickles on the side!
Recipe Note
Carmelize the onions well, as this gives more umami flavors in the patties.
Add more oil to the pan after flipping the patties, this will make both sides nice and crispy!
