Black-Eyed ‘Ulu Patties

¾ lb mature breadfruit
¼ lb ripe breadfruit
1 cup black-eyed peas or other legumes, cooked
1 cup goat cheese, crumbled
1 cup fresh cilantro, chopped
Salt and pepper, to taste
1 egg
Olive oil, for frying

Steam ‘ulu until soft. Place in a bowl with egg and mix together with a fork thoroughly. Add other ingredients and mix until fully incorporated. Using damp hands, form disc-shaped patties and set aside. Heat olive oil in a frying pan on medium high. Once hot, place patties on pan to ensure they don’t touch each other. Cook 3-4 minutes on each side or until golden brown. Serve on its own, atop a green salad, or in a bun.
