Patties are among the easiest and tastiest ways to serve ‘ulu. They can be made with ‘ulu at any maturity stage and incorporate virtually any other ingredient. Try adding ‘ulu to your next homemade burger or corned beef hash to reduce red meat consumption, or make the vegetarian recipe below and feel free to substitute other herbs, vegetables, and protein with what you have readily available.
¾ lb mature breadfruit
¼ lb ripe breadfruit
1 cup black-eyed peas or other legumes, cooked
1 cup goat cheese, crumbled
1 cup fresh cilantro, chopped
Salt and pepper, to taste
Olive oil, for frying
Steam ‘ulu until soft. Place in a bowl with egg and mix together with a fork thoroughly. Add other ingredients and mix until fully incorporated. Using damp hands, form disc-shaped patties and set aside. Heat olive oil in a frying pan on medium high. Once hot, place patties on pan to ensure they don’t touch each other. Cook 3-4 minutes on each side or until golden brown. Serve on its own, atop a green salad, or in a bun.
