A traditional hummus recipe with a Hawaiian twist! A savory, legume-free hummus made with Hawaiʻi grown breadfruit instead of garbanzo beans & tahini.

Ingredients
- 12oz mature ʻulu (peeled, cored, and steamed)
- 1¼ cups hot water
- 3 tbsp olive oil + 1 tbsp for garnish
- ½ lemon, juiced
- 1 clove garlic, peeled
- ¾ tsp salt
- ¾ tsp cumin
- 2 tbsp tahini (optional)
- Paprika or parsley for garnish
Directions
- Defrost ʻulu by steaming for 25 minutes or until cooked through.
- Set aside and let cool completely, then chop into 1” cubes.
- Place ʻulu into a food processor with other ingredients and puree until smooth – 2 to 3 minutes. If too thick, add more water until desired consistency is reached.
- Garnish with olive oil and paprika or parsley.
- Tip: do not blend ʻulu when hot or consistency may turn sticky like poi!
