Microwave your recipe-ready kalo in a covered bowl for 1 ½ minutes. The microwave is the quickest and easiest to warm up the kalo, but if you are using a stove top, you can heat up the kalo just long enough to warm it up, so you arenʻt pureeing cold kalo (it does not have to be super hot).
Place the water and warm kalo in a Vitamix (or other high-powered blender).
Turn the blender on low and gradually increase the speed as you use the tamper to help the blender puree the kalo until smooth.
Recipe Note
*Beware of trying to puree more than 6oz. of kalo at a time in your blender. It will take longer to puree and the longer it takes the more chance you have of burning out your blender’s motor. If you want to make more than 1 cup of poi, work in batches pureeing 6oz. at a time.
