delicious way to break-fast, a fruit & chocolate energy bar to start your day or a quick, healthy snack.

ʻUlu Breakfast Bars

Ingredients

    • 1 cup ʻUlu Flour

    • 1 cup Oats

    • 1 cup Coconut flour

    • 1⁄2 tsp. Baking soda

    • 1 tsp. Baking powder

    • 1⁄2 tsp. cinnamon

    • Pinch of salt

    • 1⁄2 - 1⁄3 - 0 cup sugar (optional, if making for ʻohana that like sweeter treats add 1⁄2 cup)

    • 1 cup Chocolate Chips (50% cacao - semi sweet chocolate)

    • 3 eggs

    • 1 1⁄2 cup Mashed banana (4 apple banana)

    • 1 - 1 1⁄2 cup fruit pulp (mixed berry, papaya or your choice)

    • 8 oz. melted coconut oil

    • 1 Tangelo/orange juice

    • 4 oz. water - add water until dough can be rolled in a ball ¬ crack

    • 1 tsp. vanilla

    Directions

    1. Preheat your oven to 360 degrees F

    2. Mix dry ingredients together, all besides chocolate chips.

    3. Mash banana and fruit so it is a chunky pureé

    4. Incorporate all other wet ingredients and mix well. Then, add in your chocolate chips.

    5. Oil baking sheet and spread dough/batter 1” - 1 1⁄4” over the pan

    6. Bake for 35 - 40 min at 360 degrees F.

    7. After 35 min or so, remove the pan from the oven and let cool briefly before cutting into

      bars.

    8. If you like a bit more of a crisp, you can bake for another 10 minutes.
