ʻUlu Breakfast Bars

delicious way to break-fast, a fruit & chocolate energy bar to start your day or a quick, healthy snack.

Ingredients

1 cup ʻUlu Flour
1 cup Oats
1 cup Coconut flour
1⁄2 tsp. Baking soda
1 tsp. Baking powder
1⁄2 tsp. cinnamon
Pinch of salt
1⁄2 - 1⁄3 - 0 cup sugar (optional, if making for ʻohana that like sweeter treats add 1⁄2 cup)
1 cup Chocolate Chips (50% cacao - semi sweet chocolate)

3 eggs
1 1⁄2 cup Mashed banana (4 apple banana)
1 - 1 1⁄2 cup fruit pulp (mixed berry, papaya or your choice)
8 oz. melted coconut oil
1 Tangelo/orange juice
4 oz. water - add water until dough can be rolled in a ball ¬ crack
1 tsp. vanilla
Directions
Preheat your oven to 360 degrees F
Mix dry ingredients together, all besides chocolate chips.
Mash banana and fruit so it is a chunky pureé
Incorporate all other wet ingredients and mix well. Then, add in your chocolate chips.
Oil baking sheet and spread dough/batter 1” - 1 1⁄4” over the pan
Bake for 35 - 40 min at 360 degrees F.
After 35 min or so, remove the pan from the oven and let cool briefly before cutting into
bars.
If you like a bit more of a crisp, you can bake for another 10 minutes.
