ʻUlu Cheese n' Chives Beer Bread

This is my mom's classic beer bread recipe that I grew up eating - taken up a notch using locally sourced ʻulu flour and local brewed lager. It has a crunchy and crusty exterior and soft and tender inside with delicate onion notes and a cheesy finish that perfectly compliments the earthiness of the ʻulu and the maltiness from the beer. Served warm with butter, its a quick and easy side for any meal.

ʻUlu Cheese n' Chives Beer Bread

Ingredients

  • 2 cups All-purpose flour

  • 1 cup ʻUlu flour

  • 3 Tbsp. Raw sugar or honey

  • 4 ½ tsp. Baking powder

  • 1 ½ tsp. Salt

  • 1 12oz. Can or bottle local beer (I used Ola Brew Maʻa Island Lager)

  • 1 bunch Chives, chopped

  • 1 bulb Shallot, thinly sliced

  • ½ cup Mild shredded cheese (I used Mozzarella) plus more for topping

  • 1 Tbsp. Butter, melted

Directions

  1. Mix dry ingredients in a large bowl.

  2. Add beer, chives, shallots, and cheese then mix well.
  3. Place dough in greased loaf pan.
  4. Pour melted butter on dough and sprinkle extra shredded cheese on top.
  5. Bake at 350 degrees for 50-60 min.
  6. Slice and serve warm with butter.
