Auntie Berta's famous breadfruit chicken patties are a versatile addition to any dinner! Great fried or baked you can serve them as a burger or with a salad.

ʻUlu Chicken Burger Patties

Ingredients

  • 12 oz ʻulu (peeled and cored)
  • ½ cup onion, minced

  • 3 tbsp garlic, minced

  • 12-14 oz chicken, canned

  • ½ tbsp Japanese taberu rayu (or your favorite spice)

  • 1 egg beaten

  • 1 tbsp flour

  • Oil for sauteing and frying

Directions

  1. Defrost ʻulu by steaming for 15 minutes.

  2. Once cooled, cut ½-inch cubes, set aside.

  3. Saute onions and garlic in oil until caramelized, about 5 minutes.

  4. Add chicken and saute for an additional 3 minutes, mix in spice.

  5. Add chicken mixture to diced ʻulu.

  6. Mix in egg and flour, let mixture sit for 15 minutes.

  7. Form mixture into 3 inch patties.

  8. Add oil to a non-stick pan and fry until golden or bake on parchment paper at 350℉ for about 10 minutes or until golden brown on both side.
