Auntie Berta's famous breadfruit chicken patties are a versatile addition to any dinner! Great fried or baked you can serve them as a burger or with a salad.

Ingredients

12 oz ‘ulu (peeled and cored)

½ cup onion, minced

3 tbsp garlic, minced
-
12-14 oz chicken, canned
-
½ tbsp Japanese taberu rayu (or your favorite spice)

1 egg beaten
-
1 tbsp flour
-
Oil for sauteing and frying
Directions
Defrost ‘ulu by steaming for 15 minutes.
Once cooled, cut ½-inch cubes, set aside.
Saute onions and garlic in oil until caramelized, about 5 minutes.
Add chicken and saute for an additional 3 minutes, mix in spice.
Add chicken mixture to diced ‘ulu.
Mix in egg and flour, let mixture sit for 15 minutes.
Form mixture into 3 inch patties.
Add oil to a non-stick pan and fry until golden or bake on parchment paper at 350℉ for about 10 minutes or until golden brown on both side.
