Creamy ʻUlu Hummus

A traditional hummus recipe with a Hawaiian twist! A savory, legume-free hummus made with Hawaiʻi grown breadfruit instead of garbanzo beans & tahini.

Ingredients
12oz mature ʻulu (peeled, cored, and steamed)
1¼ cups hot water
3 tbsp olive oil + 1 tbsp for garnish
½ lemon, juiced
1 clove garlic, peeled
¾ tsp salt
¾ tsp cumin
2 tbsp tahini (optional)
Paprika or parsley for garnish
Directions
Defrost ʻulu by steaming for 25 minutes or until cooked through.
Set aside and let cool completely, then chop into 1” cubes.
Place ʻulu into a food processor with other ingredients and puree until smooth – 2 to 3 minutes. If too thick, add more water until desired consistency is reached.
Garnish with olive oil and paprika or parsley.
Tip: do not blend ʻulu when hot or consistency may turn sticky like poi!
