Chewy yet tender, these mochi-inspired ʻulu pancakes embrace the naturally sticky and elastic qualities of ʻulu flour to create a uniquely satisfying bite. Mochi ʻUlu Pancakes

Ingredients

  • 62.5g ʻulu flour

  • 62.5 mochi flour

  • 10g yeast

  • 29.5g water

  • 50g eggs

  • 153g soy milk

  • 12.5g monk fruit sugar

  • 1.5g salt

  • 29g avocado oil

Directions

  1. Combine all the exact measurements of the dry ingredients in a large bowl and mix

  2. Combine all the exact measurements of the wet ingredients in a medium bowl and mix

  3. Add the wet ingredients into the dry ingredients and mix

  4. Let the batter proof for 20 minutes to 2 hours whichever is desired

  5. Pour out 3 pancakes onto a nonstick pan over low heat

  6. Flip after 2-3 minutes or until golden brown

  7. Repeat on other side of pancake

  8. Place the pancakes on a plate and repeat with 3 more pancakes or the remainder of the batter
