Traditional Yorkshire pudding with a Hawaiian twist. Made with 100% ʻulu flour and naturally gluten-free. Recipe developed by students from the University of Hawaiʻi Manoa Experimental Foods Class (Spring 2024).

ʻUlu Yorkshire Pudding

Ingredients

  • 55 grams ʻUlu Flour

  • 15 grams cornstarch

  • 100 mL milk

  • 100 mL water

  • 2 eggs

  • 1⁄4 teaspoon salt

  • 2 tablespoon sugar

  • 1⁄4 teaspoon baking powder

  • 4 tsp canola oil

Directions

  1. Drizzle the canola oil evenly into muffin tins

  2. Preheat oven to 450ºF. Place muffin tins w/ oil into the oven to heat through

  3. Combine flour, salt, and baking powder. Beat eggs into flour, salt, and baking powder until smooth

  4. Gradually add milk, water, and sugar and beat until free of lumps

  5. Remove the muffin tin from the oven and evenly pour batter into muffin tin, quickly so the tin does not lose heat

  6. Place into oven and bake for 25-30 minutes until pudding has puffed and browned

  7. Remove from oven and drain oil

  8. Let cool for 2 minutes and enjoy!
