Soft, gooey, and packed with cinnamon goodness, these gluten-free cinnamon rolls use a special blend of ʻulu flour, xanthan gum, and starch to achieve a moist and tender crumb.

ʻUlu Flour Cinnamon Rolls

Ingredients

    • 288.4 g ʻUlu AP flour

    • 25g Granulated sugar

    • 236.67g Water

    • 28.78g Unsalted butter

    • 4.06g Bakers yeast

    • 1/3 Large egg

    • 2g salt

    • 1 tsp xanthan gum

    • 10g Light brown sugar

    • 2 tsp Cinnamon

    • 18.06g Unsalted butter

    • 4g Vanilla extract

    Directions

    1. In a large mixing bowl, whisk together dry ingredients.

    2. In a heat safe bowl, combine the water and butter. Microwave in intervals until warm but not completely melted.

    3. Combine water, butter, egg, and dry ingredients and mix with a wooden spoon.

    4. Add in extra flour if too sticky and knead with hands.

    5. Shape into a ball, cover, and let rest uncovered for 10 minutes on the counter.

    6. Place the dough ball on floured surface, roll out and shape into a rectangle with a rolling pin.

    7. Spread the remaining butter in a thin layer, then sprinkle on the brown sugar and cinnamon.

    8. Roll the dough into a log, using hands to support the ends and compact it.

    9. Use a serrated knife or floss to cut the log Into rolls and place into a greased pan.

    10. Place into a proofer or warm space and let rise for one hour, preheat the overn to 350F

    11. Bake for 25-30 minutes or until golden brown.

    12. Mix the icing ingredients together and drizzle on the rolls once they are cooled.
